The return of our favorite theme ever, featuring vintage batches, glass aging, and other explorations in mezcal chronology

More than any other attribute, it’s possible that what defines heritage agave spirits — the singular thing responsible for their beauty, their deliciousness, their uniqueness — is time. Plant time, human time, and the collision between the two. The years an agave spent clinging to a rock, which can be as long as a college student’s lifespan. Fermentation time. Millenniums of migration, conquest, and adaptation. The moment you open the bottle. The “one time, one meeting” quality of both the tasting experience and the liquid itself, each of them preciously inconsistent and unrepeatable.

It’s with all of this in mind that we’re doing something we never do. For the first time ever in the mezcal room’s nearly five-year history, we’re repeating a tasting theme! The first installment of AGAVE TIME, a deep-pandemic virtual tasting in 2020, remains one of our favorite tastings ever — possibly because the delightfully abstract nature of the concept lends itself to all kinds of conversations and digressions, and possibly because it’s also just an excuse to open special vintage batches we rarely get into.

This reprisal, at our private space in Sunnyside, Queens, will involve a tasting of at least eight traditional mezcals collected during our travels in Mexico, plus light snacks. As always, you’ll try spirits you might not encounter anywhere else, and meet new people around our single communal table.

Totally coincidentally, this second edition of AGAVE TIME will occur exactly four years to the day after the first.

This small-group tasting is appropriate for guests of all backgrounds and experience levels. You can expect some snacks to accompany the spirits, but not a full meal. Feel free to send an email with any questions: hello@mezcal.nyc.
